Chickpea Vanilla Protein Squares

Isagenix Protein Oatmeal Bars with chocolate chips, chickpeas, and peanut butter.

Ingredients

  • 1 1/2 cup canned chickpeas
  • 1/3 cup peanut butter
  • 1/3 cup maple syrup
  • 1 Scoop IsaLean Creamy French Vanilla
  • 1 tsp baking powder
  • 1⁄8 tsp salt
  • 1/3 cup chocolate chips

Instructions

Heat oven to 350 Fº and fold a 7” x 7” baking pan with parchment paper.

Drain, rinse canned chickpeas under running water and dry chickpeas with a clean towel to remove excess water.

Add ingredients except chocolate chips to a blender or food processor. Process until smooth

Fold in the chocolate chips

Transfer to the parchment paper lined baking pan and top with a sprinkle of chocolate chips.

Bake in oven for 25 to 30 minutes.

Let cool for 30 minutes before serving.

Optional

Substitute maple syrup for honey

Always on the hunt for a LOW FAT Snack. A change from chocolate I tried squares.

I used 6 Tbsp of PB&Me for the peanut butter

I forgot to blend the chocolate chips into batter, 🤷🏻‍♀️ next time.

The Vanilla Protein Powder over shadows the Peanut Butter taste but they do taste great.

They are worth a second try!

I followed this recipe just as it was expect for sprinkling the top with peanut butter chips. I will use smaller dish to bake them next time so they will be thicker. 

20 minutes in the oven with 30 minutes cooling on the counter. I cut a few squares and then placed the rest in the fridge over night. They firmed up very well and kept their firmness when out of the fridge many hours later. 

I would make these the day before for that reason and might try adding a bit of coconut to the next batch.
